built this pantry and he built it with

almost entirely recycled materials and

it only cost this Pantry here around

$500 Canadian dollar that was to be fair

probably about 6 years ago so it would

be more expensive now but all this
00:02:17
beautiful wood on these shelves is
00:02:19
repurposed wood it was reclaimed from a
00:02:22
cattle sorting Arena that we had out on
00:02:24
our Ranch that was falling down so Dan

just run ran all this wood through the
00:02:28
planer and stained it all and it looks
00:02:31
absolutely beautiful the ceiling he got
00:02:33
from just an old building was an old
00:02:36
chunk of metal roofing and I just think
00:02:38
it looks absolutely beautiful and this
00:02:40
year he put in the flooring that you can
00:02:42
see here this used to have concrete a
00:02:45
painted concrete on the floor and he put
00:02:47
in this plank flooring and what I love
00:02:50
about it is the whole feeling that I
00:02:51
wanted in this Pantry was kind of like a
00:02:53
1920s mertile and I feel like this big
00:02:56
plank wood flooring here looks just
00:03:00
fantastic and kind of goes with that
00:03:01
whole theme so without further Ado let's

get right into the pantry tour I think

that I want to start on this shelf here
00:03:08
because this is kind of the fun new
00:03:09
stuff that I can this year some of it
00:03:11
anyway does that sound like a good idea

sure okay in the early part of the
00:03:15
Season before canning season really
00:03:17
kicked in I decided to try my hand at
00:03:20
some small batch canning usually I do
00:03:22
bulk canning but I did some small batch
00:03:24
canning and if you would like to see a

or most of the things that I can this

year I will put that down in the show

but in the early part of the season I
00:03:35
did a whole bunch of jellies and jams so
00:03:37
I wanted to show some of those to you
00:03:39
first one of my favorite new ones and
00:03:41
this one really surprised me is this
00:03:43
orange mango mint jelly isn't that a
00:03:46
gorgeous color and the flavor of this if
00:03:48
you like marmalade you would like this
00:03:50
one is absolutely delicious I did an
00:03:54
apple pepper jam look at how beautiful
00:03:57
that looks really really tasty on
00:03:59
crackers with
00:04:01
cheese we have cranberry sauce which I
00:04:03
do do every year super easy to make this
00:04:06
you just cook it down with some sugar a
00:04:08
little bit of orange juice sometimes I
00:04:10
add a little bit of cinnamon to it so
00:04:12
good we did a citrus cantaloupe butter
00:04:16
which also sounds like it wouldn't be
00:04:18
very good but it's also really
00:04:20
delicious this one is probably my
00:04:23
all-time favorite pepper jelly this is a
00:04:26
red pepper jelly that was actually one
00:04:28
of my best friends in elementary
00:04:30
school's mom's recipe that I just
00:04:32
tracked down this summer and made it it
00:04:35
was so nostalgic to taste it absolutely
00:04:39
delicious we have some apple butter here
00:04:43
and I like to do my apple butter so it's
00:04:44
a little bit chunky it's really good we
00:04:48
have some rhubarb barbecue sauce we have
00:04:52
a ton of apple pie filling I did not
00:04:54
make nearly enough apple pie filling
00:04:56
last year we were finished it by I think
00:04:59
it was the end of December so I canned
00:05:01
way more this year we have some
00:05:03
blueberry syrups over here and some
00:05:05
plain CL canned blueberries so I did
00:05:07
want to point out one thing because this
00:05:09
question always comes up when I share my
00:05:11
canning and that's that you will notice
00:05:13
that I don't have any rings on any of my
00:05:14
Lids these Lids are actually held down
00:05:18
by a vacuum that happens during the
00:05:20
canning process and when you keep the
00:05:22
rings on your Lids when they are put
00:05:24
into storage it can give you something
00:05:26
called a fall seal that means it can
00:05:28
look like it's sealed and even the top
00:05:30
can be concaved a little bit but when
00:05:32
you go take the ring off that lid pops
00:05:34
off and the food inside is no good so
00:05:37
what this allows me to do is before I
00:05:38
bring my jars down to the pantry I just
00:05:40
give the lids a little tug and I know
00:05:42
that they are sealed well so that's the
00:05:44
reason why you won't see any rings on
00:05:46
here so on this next row this is another
00:05:48
new thing that I did I bought myself a
00:05:49
steam juicer this year and they're not
00:05:52
that expensive and they work absolutely
00:05:54
fabulously the only thing I will say
00:05:56
about them is that the juice is a little
00:05:58
less concentrated than it is through
00:06:00
other juicing methods but it's still
00:06:01
great so we have a bunch of apple juice
00:06:04
here we have some applesauce over here
00:06:07
and then this is sour cherry pie filling
00:06:11
these cherries are from our very own
00:06:13
cherry trees which is exciting because
00:06:15
we planted our Orchard we call it a
00:06:17
forest garden it's a permaculture Food
00:06:19
Forest we planted it almost 7 years ago
00:06:22
now and it's starting to produce for us
00:06:24
every summer in abundance so to be able
00:06:26
to can cherries from my own cherry tree
00:06:29
was the best feeling ever over here we
00:06:31
have some strawberry rhubarb jam and
00:06:34
some strawberry pie filling over here we
00:06:37
have some more of the fun jellies that I
00:06:38
did we have a lilac jelly here look at
00:06:41
the color of that isn't that absolutely
00:06:45
gorgeous so it definitely has a floral
00:06:47
flavor to it it's more of a kind of an
00:06:50
exotic flavored jelly my kids aren't
00:06:53
crazy fans of it but I think it's really
00:06:56
good this one is probably the favorite
00:06:59
new one this one is called carrot cake
00:07:02
jam look at how beautiful that looks it
00:07:04
tastes like carrot cake it's really good
00:07:07
it's quite sweet though I will say that
00:07:09
and I grew what I thought were choke
00:07:13
cherries when I first planted the plant
00:07:15
I knew it was an aonia Bush but as the
00:07:18
years passed I forgot that was aonia and
00:07:20
it looks very similar to a choke cherry
00:07:22
so I called it a choke cherry all summer
00:07:24
until one of you pointed out that you
00:07:26
thought it was an aonia Bush and then I
00:07:28
remembered that I had actually planted
00:07:30
in aonia Bush so this is aonia jelly
00:07:33
that I made out of the aronia berries
00:07:35
and it was the first year that I'd been
00:07:36
able to harvest off of it and this jelly
00:07:38
is
00:07:39
delicious and then we have some plum jam
00:07:42
over here and I was so happy because I
00:07:44
didn't get any plums off my plum trees
00:07:46
this year and I also didn't get any
00:07:49
plums we didn't have a lot of stone
00:07:50
fruit in British Columbia that's where
00:07:52
we're from um this year but one of my
00:07:54
friends was able to get some plums for
00:07:57
me so I did put together some plum jam
00:08:00
which is one of my favorite kinds of jam
00:08:02
up here we have tons and tons of peaches
00:08:06
we like I said BC had a stone fruit
00:08:10
basically a disaster this year when
00:08:12
there was a frost at some point during
00:08:14
the growing season or a freeze that
00:08:16
killed all the stone fruit so all the
00:08:18
peaches that you see here were actually
00:08:19
imported up from Georgia and I was able
00:08:22
to get these much earlier than we
00:08:24
normally have peaches in our area so I
00:08:26
canned a ton of them cuz they had a
00:08:27
really good deal on them and they were
00:08:29
probably the best Peaches I have ever
00:08:31
had in my life they were amazing and
00:08:34
then there were a few things that I had
00:08:37
enough left over from last year that I
00:08:39
didn't have to can this year and the
00:08:41
salsa up here along with the picol
00:08:45
relish were some of the things that we
00:08:47
carried over from last year which was
00:08:49
great because canning salsa can be quite
00:08:52
timec consuming just with all the
00:08:53
chopping and the dicing so we have all
00:08:56
of our regular salsa here the peach
00:08:58
salsa up here which I did do fresh this
00:09:00
year with those gorgeous Georgia Peaches
00:09:04
the picol relish this is a delicious
00:09:07
relish but I definitely made too much of
00:09:09
it last year because we still have lots
00:09:11
and lots of jars of picol relish
00:09:14
here we have a green tomato salsa I used
00:09:18
up some of the green tomatoes I didn't
00:09:19
have a ton of green tomatoes this year
00:09:21
which was really nice most of our
00:09:22
Tomatoes actually ripened on the vine
00:09:24
but I did have a few so we have some
00:09:26
green tomato salsa and then some just
00:09:28
plain kidney beans up over here and then
00:09:31
down here at the bottom of the Shelf I
00:09:34
have always been more of what I would
00:09:36
call an ingredient caner and then I
00:09:38
would use all these ingredients to make
00:09:40
soup but we are really really busy this
00:09:43
year so I thought having some
00:09:44
convenience meals on the shelves would
00:09:47
be awesome and Friends it has been the
00:09:49
best thing ever and I plan to do it
00:09:51
again next year so I did a whole bunch
00:09:53
of different things this year I did a
00:09:54
vegetable soup a beef stew a bean soup
00:09:58
and this might not look very good but it
00:10:00
tastes delicious we have a pea soup some
00:10:04
chili over here down here we have uh
00:10:07
turkey soup beef soup and pork and beans
00:10:11
and then we have a whole bunch of turkey
00:10:12
stock when we butchered our turkeys this
00:10:14
year what I usually do is I take the
00:10:16
entire carcass and I put it into a big
00:10:19
gigantic pot and then I boil that for
00:10:22
around 24 hours and can up that and it
00:10:24
makes the best soup stock ever beside
00:10:27
that we have just some plain Meats so I
00:10:30
love to can plain meat we have ground
00:10:33
beef down here pork turkey chicken all
00:10:38
along the entire bottom of this is all
00:10:41
kind of um ingredient type canning like
00:10:45
the just the the plain Meats the plain
00:10:47
stocks and things like that this is I
00:10:50
just think such a pretty part of the
00:10:51
pantry because it's a lot of the Pickled
00:10:53
products and because of the vinegar the
00:10:55
color of pickled products is really
00:10:57
retained and I just think it looks
00:10:58
really beautiful so we have up on the
00:11:01
top shelf these are just more
00:11:03
ingredients we have corn green beans and
00:11:06
then all here is squash and then we have
00:11:09
some navy beans back over here on the
00:11:12
next shelf down we have some beautiful
00:11:15
bread and butter pickles here we have
00:11:18
some beautiful dill pickles here some
00:11:22
lovely pickled asparagus I love pickled
00:11:25
asparagus on a piece of toast with some
00:11:27
mayonnaise some slices of cheese and
00:11:28
then the pickle asparagus on top it
00:11:30
tastes so so good and then back here we
00:11:35
have some sandwich pickles these are
00:11:38
delicious on a hamburger and friends is
00:11:41
there anything more beautiful than a
00:11:44
pickled beet even if you don't like
00:11:46
beads you have to appreciate how
00:11:48
gorgeous they are with that beautiful
00:11:50
deep purple color we have our cinnamon
00:11:54
pickled carrots and I know cinnamon
00:11:56
might sound like a weird flavor to put
00:11:58
in with pickled carrots but these are
00:12:00
absolutely scrumptious this is something
00:12:02
that I have never canned before these
00:12:05
are pickled mushrooms and as you can see
00:12:07
there's a lot of head space so head
00:12:09
space is the space between the top of
00:12:11
your product and the top of the jar and
00:12:13
generally you want around 3/4 to an inch
00:12:15
of head space so more like this much
00:12:16
space but I realized when I canned these
00:12:19
because I didn't cook the mushrooms
00:12:21
first which is what the recipe said to
00:12:22
do that they absorbed or something I
00:12:25
don't know exactly what happened but
00:12:27
absorbed a lot of the vinegar and I lost
00:12:30
all of that headp space so next time I
00:12:32
make these I'm going to cook the
00:12:33
mushrooms first but they look pretty and
00:12:37
Dan said these were absolutely delicious

we had them on Pizza one day and I think
00:12:41
on sandwiches they would be really good
00:12:42
as well so that's one I'm going to do
00:12:44
again for sure we have some more just
00:12:47
canned plain green beans here and then
00:12:49
these beautiful Dilly beans with tons of
00:12:52
garlic there's some red pepper flakes in
00:12:54
there and some beautiful heads of Dill
00:12:58

and over here this is this entire
00:13:02
section right here along with down over

here is all pickled peppers they're um
00:13:07
pickled peppers and they're also canned
00:13:09
with a lot of sugar at least a lot of
00:13:10
these are um a cowboy candy if you might
00:13:13
be familiar with hearing about cowboy
00:13:14
candy but these are the best things with
00:13:17
cheese and crackers on Pizza in
00:13:20
sandwiches what else do you eat these on
00:13:21
you eat these on a lot of different
00:13:23
everything salad salad they're so good
00:13:26
which is why I have so very many of them
00:13:29
here so these ones are all jalapenos
00:13:31
here we have banana peppers over here
00:13:34
and I think it's interesting that these
00:13:35
are both banana peppers maybe I added a
00:13:38
little bit of turmeric to these it kind
00:13:39
of looks like I did cuz those are much
00:13:42
more orange looking they're prettier I
00:13:44
think so those are scrumptious and
00:13:47
delicious then we have lots of relishes
00:13:50
down over here this is zucchini relish
00:13:53
and we have been making this relish for
00:13:57

24 years I think this is one that I make

every single year it's everyone's

favorite relish it's the one you want

the Fall Fair with yes it is like 25 or

something yeah exactly um we have a

green chili sauce this is also a new one

that I have never made before that's
00:14:15
really good and then we have this is
00:14:17
french onion soup and I know it does not
00:14:19
look very good but it is absolutely
00:14:22
delicious I use this to make gravy I
00:14:25
dump it on a pot roast and roast it um
00:14:27
in with a pot roast it's so good and
00:14:29
then of course just this french onion
00:14:31
soup as well and then we have just plain
00:14:33
potatoes all back over here over here we
00:14:36
have our pickled slaws my favorite way
00:14:39
to pickle cabbage is with onions
00:14:42
sometimes I'll put grated carrot in
00:14:43
there like in this one and red peppers
00:14:45
and celery seed a little bit of sugar
00:14:48
it's super delicious I like having these
00:14:50
on pork tacos I even will drain it out
00:14:52
and give it a little bit of a rinse off
00:14:54
because it is very vinegary and then
00:14:55
make just like a typical colel out of it
00:14:58
adding mayonnaise and it's really really
00:15:00
good and then we have a garlic sauce and
00:15:03
I can see I didn't write on here so

these little labels here are actually

beadboard that Dan just cut into strips

and then we painted it with um

chalkboard paint they've worked really

well for being able to just have

something easy to be able to change the

here every year and they're just stuck

on with double-sided tape so we can move

them around pretty easily but I can see

that oh I did write on it but it got it

got rubbed off it's the one disadvantage

of the chalk and then we have a garlic

curry sauce here some canned salmon over

here we use this to add to salad um

sometimes for making like a salmon melt

sandwich and then all of this is beef

and pork we have a few sauces back over

here oh why do we have tomato sauce back

entire shelf of tomato products over

that pantry but these ones I guess we

forgot to move over to the other side

anyway I have room for them anyway okay

all tomato we did a ton of tomato

canning this year just tons and tons and

tons of it so we actually um converted

some of the shelves in our store Pantry

into canning shelves which we'll bring

you over there in a second but anyway

yes that's all tomato sauce and then on

the bottom is just all broth beans and
00:16:24
canned meat all along down here when Dan

first built this p for me he built this

as my and I can never say this word

not yeah I think that's how it is anyway

he built this for that purpose so that I

could do all my herbs here make my

tinctures and things like that and I was

just starting to get into medicinal

herbs back then but I have decided since

then I think I did it for a couple of
00:16:52
years that it's really not my area of
00:16:54
Interest so I'll leave that to The
00:16:56
Experts so this year I have gone through
00:16:59
this entire thing and this is all now
00:17:02
culinary herbs and teas so most of the
00:17:05
herbs that you can see here that are in
00:17:06
the jars are ones that I grew in my
00:17:08
garden and I freeze dried freeze-dried
00:17:10
herbs are the best thing ever every time
00:17:13
I open up a jar it just smells like
00:17:15
summer to me so we have all kinds of
00:17:17
stuff along here we have more basil than
00:17:21
any one person could need I have whole
00:17:24
basil leaves like this and then I also
00:17:27
have ground up basil leaves like this
00:17:30
and I did try to put the years on my
00:17:33
labels I have this little label maker
00:17:36
that I bought several years ago from
00:17:38
Staples and it was not an expensive
00:17:41
label maker and it this thing little
00:17:42
thing just works so incredibly well I
00:17:44
just love it so we have everything
00:17:46
labeled here so we have parsley I don't
00:17:49
have a oh I do have more parsley here
00:17:51
okay I was wondering that didn't look
00:17:52
like as much partially as I remember
00:17:53
growing but anyway so this kale I add
00:17:58
this to my smooth smoth these every
00:17:59
single morning I just add a tablespoon
00:18:00
of it so I've just I ground up the
00:18:03
leaves and then freeze-dried them and
00:18:05
then just made this powder out of them
00:18:07
and I just love this stuff and then we
00:18:09
have some chamomile that I freeze dried
00:18:12
and this we use it for tea of
00:18:14
course we have mint some peppers some
00:18:18
tomato powder so this is kind of cool um
00:18:21
with my tomatoes I would always take the
00:18:23
skins off and the seeds and then just
00:18:25
give those to the chickens but this year
00:18:27
somebody recommended that I free dry
00:18:29
them and then turn them into tomato
00:18:30
powder so that's what I did so we've
00:18:32
been using this on popcorn um you can
00:18:35
turn this into a tomato paste by just
00:18:37
adding some water to it it's great stuff
00:18:40
we have some powdered milk here this is
00:18:42
freeze-dried milk that I freeze-dried
00:18:44
some cardamom that store-bought some
00:18:47
clangula fermented garlic in honey here
00:18:50
this is actually from last year that I
00:18:51
have left over from last year I haven't
00:18:53
started a fresh batch for this year yet
00:18:56
oh dear oh no so Dan has been teasing me so

bad about my poor labeling that I've
00:19:04
done and so I as you can see
00:19:06
everything's labeled in here um and that
00:19:08
is because I am finding the wisdom in
00:19:11
making sure things are labeled because

what happens is I go put this in the jar

and I think I'll know what that is but
00:19:17
here's the thing this looks the same as
00:19:19
all of these other ones so let's see if

we can figure out what it actually

is can you

tell what is is it it smells good it

does smell it smells really good almost

smells like oregano no it's not basil

okay so it's definitely not basil I

think it might be

to just put this aside and make sure

yeast here this is of course

store-bought tomato flakes those are

more of the um freeze dried tomato skins

and seeds we have chives here we have

mint and sage and Dill green onions more

basil so much basil and then those jars

up at the top I don't have labels either

but I do know what those ones are

so we have parsley chives tomatoes so

these are sundried tomatoes up here

basil more basil and more parsley up

there and then more more tomato powder

up here and some more chamomile over

there and then we have a bunch of

store-bought um herbs here and then I

think that is about it for this shelf so

now we head over to our store

Pantry this Pantry we have always used
00:20:46
for our store-bought items we buy a lot
00:20:48
of our food in bulk we live quite a
00:20:51
distance away from the nearest Costco or
00:20:53
any other place that we can buy food and
00:20:55
bulk so we usually travel to the nearest
00:20:58
Costco Costco every 3 to 6 months and
00:21:01
stock up so this is where we store a lot
00:21:04
of that food but this year because of
00:21:06
the amount of canning I did we needed to
00:21:08
move some of that stuff out so that's
00:21:10
what's moved over to the warehouse and
00:21:13
have filled it with more canning so this
00:21:15
is almost all actually it is all tomato
00:21:18
products on this shelf so up at the top
00:21:20
we have just plain diced
00:21:23
tomatoes we have Sloppy dough mix over
00:21:26
here which also is one of those things
00:21:29
that does not look very good but tastes
00:21:30
delicious you can just open up a can of
00:21:32
this throw it in a pot heat it up and
00:21:34
