Gli albumi puoi pastorizzarli allo stesso modo, senza zucchero, portandoli a 61°C per 3 minuti. In entrambi i casi lascia raffreddare completamente prima di proseguire. Monta gli albumi a neve ferma. Incorporali alla crema di mascarpone fredda, poco alla volta, con movimenti dal basso verso l’alto usando una spatola, senza smontare il composto. Sul fondo della pirofila spalma un paio di cucchiaiate di crema. Inzuppa i savoiardi nel caffè freddo per un secondo appena e fai il primo strato. Copri con la crema e continua alternando biscotti e crema fino a esaurimento, terminando con la crema. Spolvera generosamente di cacao amaro e metti in frigorifero per almeno 3 ore prima di servirlo.
