00:00:04
i'm just chopping up some arugula here
00:00:07
pre-washed and ready to go love that
00:00:09
huge time saver
00:00:11
this is
00:00:12
i think the star of my mom's stuffing
00:00:14
it's a very peppery green
00:00:16
it's called arukula in italian that
00:00:18
means rocket
00:00:20
rocket lettuce you want to chop all
00:00:21
these things very fine i'm chopping up a
00:00:24
little uh parsley i'm going to sprinkle
00:00:26
in some breadcrumbs in the base of my
00:00:28
bowl
00:00:29
so i just put a splash of milk in there
00:00:30
to moisten the bread up a bit
00:00:33
i'm going to add
00:00:35
my arugula and my parsley in there
00:00:39
a couple of good handfuls of grated
00:00:41
cheese you could use parm you could use
00:00:44
locately asiago
00:00:47
any firm cheese
00:00:51
good amount of salt and pepper in there
00:00:55
i like it kind of coarse like that
00:00:59
a little bit of salt because you got a
00:01:01
lot of salt in the cheese going on
00:01:04
now the garlic i'm just going to need a
00:01:05
couple of cloves cracked when i brown up
00:01:07
the meat so i'm just going to save that
00:01:08
off to the side
00:01:10
the onion goes right in the stuffing
00:01:11
though you just need a real small onion
00:01:14
you just want little bits of it going
00:01:15
throughout the stuffing
00:01:20
beautiful
00:01:21
i think that's fine pop that in there
00:01:24
you just lightly toss this with your
00:01:25
fingertips
00:01:29
get it combined way up from the bottom
00:01:31
because you got the milk in there
00:01:32
you don't want to end up with clumps
00:01:34
just run it through your fingers real
00:01:35
quick
00:01:37
oh it's so fragrant smells fantastic
00:01:40
i'm going to pile this out
00:01:43
set these off to the side here and show
00:01:45
you how to build a couple of these
00:01:47
you take the thin cut of meat
00:01:50
you're going to top it with a piece of
00:01:52
prosciutto an italian ham
00:02:00
just like this
00:02:02
now i put the stuffing right down right
00:02:04
on top of that ham
00:02:05
and just a little bit you don't want it
00:02:07
to come out while it's cooking so a
00:02:09
little bit like that let me just grab my
00:02:11
toothpicks here
00:02:14
you're going to need the toothpicks to
00:02:15
secure it so that the meat doesn't start
00:02:16
to unroll when you're browning it roll
00:02:18
it up nice and tight all the way to the
00:02:20
edge
00:02:23
beautiful perfect i just give it a
00:02:25
little squeeze like that
00:02:28
to kind of set my stuffing in there and
00:02:30
then you just anchor it with a couple of
00:02:31
picks now don't bury them in there so
00:02:33
deep you can't get them out when you're
00:02:34
ready to
00:02:36
perfect and i've got my skillet nice and
00:02:38
hot here so i'm going to put a couple of
00:02:40
cloves of cracked garlic in the bottom
00:02:42
with enough extra virgin olive oil to
00:02:44
coat the bottom of the pan so the meat
00:02:46
browns up really nicely
00:02:47
pans good and hot
00:02:49
i finished rolling up my meat here
00:02:52
and let me just grab some tongs
00:02:54
to work with
00:02:55
i've got it anchored with toothpicks so
00:02:57
that wonderful stuffing of arugula and
00:02:59
breadcrumb and cheese and parsley won't
00:03:02
come out on me
00:03:04
i used a thin cut strip steak so it's
00:03:07
nice and tender and the meat will cook
00:03:08
up quick
00:03:11
oh it smells wonderful now i'm going to
00:03:13
brown this on both sides
00:03:15
and get it out of the pan so i can build
00:03:17
the sauce then you set it back in for a
00:03:18
few minutes to finish off
00:03:20
give my meat a turn here
00:03:23
oh look at that gorgeous
00:03:25
see i told you it goes really quick
00:03:28
the garlic is so great just crack the
00:03:30
cloves though don't chop them all the
00:03:32
way
00:03:33
because they'll get a little bitter in
00:03:34
there they would burn up because i got
00:03:35
this pan really hot to get to meet
00:03:38
that great color
00:03:41
okay
00:03:42
let that hang out a minute and get onto
00:03:44
the cremini's few capsules do me here
00:03:47
i'm going to do this one last one you
00:03:49
just want little bits of it going
00:03:50
through
00:03:51
this is a very very light sauce
00:03:55
compared to a lot of brazil's that are
00:03:56
done in a heavy tomato sauce and really
00:03:58
slow cooking
00:04:00
this one's very quick
00:04:03
okay i think that's a good amount of
00:04:05
mushroom
00:04:06
to get my meat out
00:04:08
i'm going to add a little bit of butter
00:04:09
to that pan
00:04:11
turn it down now
00:04:13
i got the meat brown so now i can drop
00:04:15
the temperature on that a little bit
00:04:18
set my mushrooms right down into that
00:04:19
butter
00:04:23
and the butter is going to help me make
00:04:24
a quick roux in the bottom of the pan
00:04:26
here to thicken up my sauce
00:04:29
let that go for a minute
00:04:30
get some of the cans open that i need
00:04:35
i've got beef stock and tomato paste
00:04:37
here
00:04:38
it's a very very simple sauce okay now
00:04:42
that's sauteed up a little the butter's
00:04:44
all melted down in there we can go ahead
00:04:46
and sprinkle in our flour
00:04:49
a couple spoonfuls of that
00:04:53
and you'll gotta let it cook a little
00:04:55
bit so you don't have that raw flour
00:04:57
taste as it cooks up with the fat in the
00:04:59
bottom of the pan there it's going to
00:05:00
make a great thickening agent for the
00:05:02
sauce
00:05:03
got my pan on medium heat
00:05:07
hit it with a cup of wine and just bring
00:05:09
up all those good bits from the bottom
00:05:12
gorgeous look at that look at that color
00:05:14
beautiful
00:05:17
incorporate the beef stock
00:05:20
[Music]
00:05:22
there we go get that in there
00:05:28
at this point the sauce has come
00:05:29
together i let the tomato paste cook out
00:05:31
a bit i need to put a lid on it just to
00:05:33
finish cooking the meat all the way
00:05:34
through there
00:05:36
spoon that down over it there
00:05:40
lovely much lighter than most virgils i
00:05:42
love this dish it's perfect
00:05:56
you
